&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Con la &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;nida&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; si facevano anche delle torte, &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;peta de nida&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;. Il latticello veniva&amp;nbsp; utilizzato dalle famiglie più povere, al posto del più sostanzioso e&amp;nbsp; pregiato colostro, &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;dussa/duissa&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; (fonte orale).&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;“Per ottenere un buon burro (&lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;butiro/onto de prima&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;) e per assicurarne la conservazione era necessario privarlo il più possibile dal latticello. [...] Con il latticello, ovvero il liquido residuale della lavorazione del burro di panna, veniva prodotto un &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;butiro/onto de seconda&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;. La scrematura del latticello venne introdotta verso gli anni 1930-'40 e solitamente le due qualità di burro erano tenute separate e vendute a prezzo differente” &lt;/span&gt;&lt;span style="font-weight: 400;"&gt;(&lt;/span&gt;&lt;span style="font-weight: 400;"&gt;Da Deppo e Cason, 1999&lt;/span&gt;&lt;span style="font-weight: 400;"&gt;).&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Proverbi come &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;L à senpre magnou nida&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; (trad. italiana: che significa ‘è cresciuto a latticello’, indicando una vita vissuta nella miseria) oppure &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;Avé na ziera da nida / Avé na ziera da peta e nida&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; (trad. italiana: essere di un colorito cereo, cadaverico / dare idea di non godere di buona salute) e &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;Fei peta co la nida - &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;fare la focaccia con la nida;&lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt; l àa senpre magnou nida (&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;trad. italiana: è sempre vissuto nella miseria;&lt;/span&gt; &lt;span style="font-weight: 400;"&gt;chi non aveva mucche o capre [&lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;v. làte&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;]) trasmettono l’associazione del latticello alla povertà, essendo un cibo di scarsa qualità.&amp;nbsp;&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Il latticello, derivato dagli scarti del latte, è un simbolo della povertà che caratterizzava la vita in epoche passate. Molte famiglie indigenti e prive di latte fresco, infatti, erano costrette a fare affidamento sul latticello come sostituto, evidenziando le difficoltà e le privazioni della vita quotidiana.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;L'origine etimologica del termine &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;nida&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; risale al latino "&lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;nitidus&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;", che significa nettare o pulizia (Luigi, 2000). Le immagini esposte al Museo della Latteria di Lozzo di Cadore illustrano gli strumenti utilizzati per la produzione del latticello, evidenziando l'importanza economica e sociale di questo alimento nelle epoche passate.&lt;/span&gt;&lt;/p&gt;&#13;
