                <text>&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Il &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;clonpär&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;, una figura caratteristica nel territorio del Comelico, operava come uno stagnino ambulante che si stabiliva temporaneamente nelle piazze dei vari paesi. Una volta preparata la sua fucinella portatile alimentata a carbone, aspettava che le massaie gli portassero secchi, padelle e pentole da aggiustare e stagnare. Questa pratica, diffusa dalla fine dell'800, contribuì all'emigrazione dalle valli del Comelico. Partendo da località come Dosoledo, Padola, Casamazzagno, Candide e Costa, molti si spostavano verso altre regioni italiane, ma oltre la metà emigrava verso Svizzera, Germania, Austria e Francia. Si stima che fino alla metà del '900 siano stati almeno 350 o 400, distribuiti in due o tre generazioni.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;L'etimologia del termine &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;clonpär&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; è di origine germanica ed è la stessa del tedesco &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;Klempner&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;, che significa stagnino, lattoniere.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;L'attività dell'ambulante è stata un elemento significativo nella vita del Comelico dal tardo Ottocento fino alla metà del Novecento, rappresentando una fonte vitale di reddito per molte famiglie dell'epoca. Le foto che ritraggono gli ambulanti ci offrono uno sguardo prezioso sulla storia e sull'importanza di questo mestiere.&lt;/span&gt;&lt;/p&gt;&#13;

&lt;p&gt;&lt;span style="font-weight: 400;"&gt;‘&lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;Strafit&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;’&lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;, &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;un altro termine per indicare chiodo,&lt;/span&gt; &lt;span style="font-weight: 400;"&gt;è anche utilizzato per descrivere una persona molto magra.&lt;/span&gt;&lt;/p&gt;&#13;

                <text>&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Vi siete mai chiesti da dove deriva l’espressione “Fare una figura da chiodi”?&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;La risposta la troviamo in un mestiere antico, quello del &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;ciodarot &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;che, nel territorio zoldano, indicava il maestro fabbro specializzato nella produzione di chiodi e minuterie. Il suo talento si esprimeva attraverso la fabbricazione di oggetti come le &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;broche &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;(chiodi da scarpa), chiavi, pesi per bilance e strumenti di uso domestico e agricolo.&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;L’espressione &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;‘&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;fare una figura da chiodi&lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;’&amp;nbsp; (fegura da ciodi) &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;probabilmente ha la stessa origine della più nota locuzione &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;‘&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;robe da chiodo’ che faceva riferimento al fatto che i chiodi venivano realizzati con scarti provenienti da altre lavorazioni.&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Il &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;ciodarot &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;simboleggia la maestria dei lavoratori artigiani dei tempi passati. Tra i chiodaioli emergeva una distinzione netta tra &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;mistro &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;e &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;batador&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;. Quest’ultimo, più giovane e meno esperto, assumeva il ruolo di collaboratore, affiancando il &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;mistro &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;nei suoi lavori artigianali.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Altre varianti includono &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;paroon de zoca&lt;/span&gt;&lt;/i&gt; &lt;span style="font-weight: 400;"&gt;(proprietario del ceppo da lavoro), il fabbro chiodaiolo proprietario di una &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;zoca&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;, postazione con ceppo e incudine per la lavorazione dei chiodi. Nelle &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;fusinele &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;(fucine), vi erano più postazioni di lavoro, ognuna di proprietà di singoli fabbri.&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Le foto ci conducono nell'intimità della vita quotidiana del &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;ciodarot&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;, rivelando la maestria nel suo lavoro e le mani esperte che sono testimoni del savoir-faire trasmesso nel corso degli anni.&lt;/span&gt;&lt;/p&gt;&#13;

                <text>&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Si tratta di un attrezzo utilizzato per il trasporto a spalle dell'acqua: è costituito da un'asta di legno arcuata, alle cui estremità sono applicati due ganci in ferro sui quali venivano agganciati i secchi, uno per parte.&lt;/span&gt;&lt;/p&gt;&#13;

Il movimento oscillatorio di questo strumento, realizzato con un legno piuttosto elastico, ricorda quello di una persona che &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;zampedea&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;, cioè cammina barcollando.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;L’origine etimologica di &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;zampedon&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; è molto antica, risalendo addirittura alla&lt;/span&gt; &lt;span style="font-weight: 400;"&gt;radice gallica&lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt; camb&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;- curvo, piegato (Nicolai 2000).&lt;/span&gt;&lt;/p&gt;&#13;

A questo impasto vengono poi aggiunte varie spezie e aromi e il vino.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Diffuso in varie zone del bellunese, rappresenta una tipica pietanza montana.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;In merito alla sue origine molto si è detto, anche troppo, e tanti affermano che la ricetta tragga le proprie origini dal lontano medioevo. È certo, però, che la versione zoldana rimane una delle più famose, se non la migliore. In particolare viene ricordata la ricetta affinata nella macelleria di Dont (Macelleria del Tita da Dont) che compare in diverse fonti (Croatto, 2004; Vaona, 2023).&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Ad oggi viene prodotto nelle locali macellerie zoldane.&lt;/span&gt;&lt;/p&gt;&#13;

&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Da leccarsi i baffi!&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Non a caso il termine&amp;nbsp; latino dal quale deriva è &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;pappare&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; + &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;-aceu&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; + &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;-eolu&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; ‘mangiare avidamente’ da voce onomatopeica ( Nicolai e Pellegrini 2000)&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;E devono essere stati davvero appetitosi per ispirare un detto che sembra fatto apposta per sottolineare la golosità di chi si ‘tuffa’ nel piatto. Si diceva, infatti, che:&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;I papazuoi i cor ju per i troi, la polenta la stenta, la jufa la stufa&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; (trad. italiana: gli gnocchetti corrono giù per i sentieri, la polenta fa fatica, la minestra di polenta stufa)&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;E come gnocchetti sono saltate di qua e di là diverse varianti: &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;papazoi &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;(Basso Agordino), &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;papazui&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; (La Valle Agordina), &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;papaciuoi&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; (Laste), &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;menudiei, pestariei&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; (Pallabazzer 1989; Rossi 1992)&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Ma come si prepara questo piatto golosissimo? Ecco una ricetta originale:&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;Se meteva doi trei pugn de farina bianća nte n ćadin de legn, co na man se ghe treva ju aiva a goze e con chel’autra se missieva per fà vegnì i balot; daspò se meteva sul fuoch l laviejin col lat e sal e cande che l boiva se treva inte i papazuoi co na man, e endana se sfregoleva che i vegnisse menui, no propio gnoch.&lt;/span&gt;&lt;/i&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;(trad. italiana: si mettevano due tre pugni di farina bianca in un catino di legno, con una mano si versava acqua a gocce e con l’altra si mischiava per far venire le palline; dopo si metteva sul fuoco il piccolo laveggio con il latte e sale e quando bolliva si gettavano i &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;papazuoi &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;con una mano e nel frattempo si sbriciolavano affinché diventassero piccoli, non grossi come gnocchi)&lt;/span&gt;&lt;/p&gt;&#13;

Durante la cottura del lardo per conservarlo, si trasformava in strutto e, nel bollire, piccoli pezzetti di carne affioravano e friggevano, diventando estremamente gustosi. Questi pezzettini venivano poi utilizzati per condire la &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;menestra da orz e da fasuoi e co le patate cote&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; (trad. italiana: minestra d'orzo e di fagioli e con le patate cotte).&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Il termine ha origine dal latino &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;fricta&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; con l'aggiunta del suffisso &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;-ula&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;, che significa "frittella". &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;Insicium&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; indica invece i pezzetti di carne di maiale dopo la cottura del lardo e la formazione dello strutto (Zingarelli).&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Esiste anche la variante &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;fritola&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;, che nel gergale può indicare anche la vulva.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;Questo termine è strettamente legato alla vita di montagna e al modo di alimentarsi delle persone e le emozioni che evoca sono molteplici: il ricordo di quando si preparava lo strutto e si metteva via, i tocchi di carne fritta che affioravano e venivano dati ai ragazzi, le &lt;/span&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;frìdole&lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt; erano così deliziose che se ne mangiava in abbondanza, anche se spesso causavano indigestione.&lt;/span&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;Co i cosea el lardo par far struto e meterlo via, vegnia su i tochet de carne frita e i ne li dea a noi tosat, le fridole le era cossì bone che se le magnea da ingordi el pi de le olte se fea indigestion &lt;/span&gt;&lt;/i&gt;&lt;span style="font-weight: 400;"&gt;(trad. italiana: Quando cuocevano il lardo per fare lo strutto e metterlo via, venivano a galla i pezzetti carne fritta e li davano a noi ragazzi, i ciccioli erano così buoni che li mangiavamo da ingordi e molto spesso facevamo indigestione)&lt;/span&gt;&lt;/p&gt;</text>

&lt;p&gt;&lt;i&gt;&lt;span style="font-weight: 400;"&gt;Per fà la jufa co la morcia se buteva la farina jala ntel ćaudrol onde che era la morcia del butiro cot (per fà la jufa frita se delegheva l strut nte na farsuora e se ghe jontea la farina jala), se messedeva e se lasseva frije n cin, daspò se ghe buteva sora l’ega de boi e se cuoseva per na mej’oreta finché se sentiva chel bon udor de cot; la jufa se la magneva col lat.&lt;/span&gt;&lt;/i&gt;&lt;/p&gt;&#13;
&lt;p&gt;&lt;span style="font-weight: 400;"&gt;(trad. italiana: per preparare la farinata con la “morcia” si buttava una certa quantità di farina di granoturco nel paiolo dove c’erano i residui del burro cotto (per fare la farinata fritta si rosolava la farina nello strutto sciolto in un tegame), si mescolava e si friggeva un po’, dopo si versava sopra acqua bollente e si lasciava cuocere lentamente per mezz’ora finché si sentiva quel profumino appetitoso di cotto; la farinata si mangiava con il latte) (testimonianza di La Valle Agordina; Rossi 1992)&lt;/span&gt;&lt;/p&gt;</text>
